INOVASI PREBIOTIK BERBAHAN DASAR KACANG MERAH SEBAGAI SUPLEMEN UNTUK PEMENUHAN GIZI KELUARGA
Abstract
Red bean (Phaseolus vulgaris L.) is a type of legume that is commonly cultivated in Indonesia. Based on the research that has been done, red beans are known to be a source of vegetable protein and contain high insoluble dietary fiber and contain oligosaccharides that can be used as a source of prebiotics for the growth of probiotic bacteria. The purpose of this research is this research generally aims to find out the modification of fermented food to fulfill family nutrition. The method used is the research conducted at the Food Technobio Laboratory, Atma Jaya University, Yogyakarta from November 2013 to April 2014. The results of this study are changes in nutritional content after the addition of red bean powder with each percentage carried out. The conclusion is that red peanuts are an alternative for fulfilling family nutrition.
